Garlicky Goat Cheese and Arugula over Penne

Ingredients

  • 4 ounces goat cheese
  • 3/4 cup Parmesan cheese, grated
  • 3 cups coarsely chopped arugula, stems included
  • 2 small tomatoes, chopped
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • 16 oz penne pasta
  • 1/4 cup olive oil
  • 6 cloves garlic, minced
  • 1 medium red onion, sliced and halved
  • 2 tbsp balsamic vinegar

Instructions

  1. Cook pasta in a large pot of boiling salted water until al dente.
  2. Heat olive oil on medium-high in a skillet. Add onions and balsamic vinegar, stirring occasionally until near caramelized.
  3. Reduce heat on onions to medium, add garlic, and cook an additional 2 minutes.
  4. Crumble goat cheese into a large serving bowl. Add Parmesan, arugula, tomatoes, salt, pepper, and garlic/onion mix (including oil).
  5. Drain pasta, toss with goat cheese mixture. Garnish with additional Parmesan if desired.
